“Blini” Russian Pancakes Recipe

Spreading positivity and wishing strength to all of you. While self-isolating may seem boring and desperate, it is still a great opportunity to learn new things and increase your knowledge in every small field. Though your favorite coffee shops and bakeries may be closed, you still have time to explore cooking on your own. In this recipe, I’m going to share one of the most popular meals in Russia which is really easy to cook! All of the ingredients you might find at your place while COVID-19 has all of us stuck at home.

For these pancakes, you will need 2 cups of milk, 3 eggs, 2 tablespoons of white sugar, a bit of salt, and 3 tablespoons of vegetable oil.

Step 1: Break eggs into a bowl, add salt and sugar. Stir with a whisk or fork until the consistency is smooth and uniform.

Step 2: Pour about half of the milk into the eggs and mix.

Step 3: Add flour and mix until its cream-like.

Step 4: Pour in the remaining milk and stir. The dough should turn out liquid and easy to pour.

Step 5: Pour in the vegetable oil. Mix the dough and let it stand for 15-20 minutes.

Step 6: Heat the pan well and grease it with a thin layer of vegetable oil.

Step 7: Pour half of a ladle of dough on the center of the pan and quickly spread it into a thin layer, slightly turning the pan.

Step 8: When the edges of the dough begin to dry out and turn lightly brown, pry the pancake with a thin wide spatula and gently turn it over. Let the pancake become lightly brown on the other side.

Step 9: With the help of a spatula, remove the finished pancakes from the pan, transfer to a plate.

And here we are! This meal can be either a main course or a dessert – it all depends on what do you serve it with. Blini are really great with honey, marmalade, slightly salted salmon or minced meat.
