Russian Zucchini Fritters

I hope you all are doing well! In this recipe, I’ll tell you how to make another Russian dish which is a perfect snack for breakfast, lunch, or even dinner. Zucchini fritters are a very healthy dish, even though it’s roasted, which is easy and simple to prepare.
For these fritters, you will need 2 pieces of medium-sized zucchini, 1 teaspoon of salt, 50 grams of fresh green onion, 1 big egg, 1 cup of wheat flour, 1/2 teaspoon of ground black pepper, olive oil to grease the pan.
Step 1: Wash the zucchini, dry with a towel, and pass through a coarse grater without removing the peel.
Step 2: Add salt, mix, and let it brew for 10 minutes.
Step 3: After 10 minutes, wring out the zucchini, add the chopped fresh green onion and ground black pepper to the bowl, mix.
Step 4: Then add one egg, wheat flour, and mix it all up thoroughly.
Step 5: Heat 2 tablespoons of oil in a pan, put out one tablespoon of the zucchini mixture, gently squeezing on top carefully shaping it in a circle.
Step 6: Cook for 2-3 minutes on each side, on fire not lower than medium, until the golden brown color is reached.
Congratulations! Fritters are best served with sour cream that in Russia we call “smetana.” By the way, they can also be served as a side dish, for example, to fish. As additives, you can use carrots and cheese, as well as add spices – garlic, oregano, basil. Serve the fritters hot or warm. Zucchini fritters are very tender, soft, with a light crisp, with a rich vegetable taste and aroma – a great and easy meal to try.
If you are worried about your diet – no problem! Decrease the amount of wheat flour to ½ cup, but make sure to wring out the maximum of water from vegetables. Enjoy your meal!
